The 48th International Congress of Meat Science and Technology was held over 6 days from August 25-31 in Rome, Italy. There were a total of 567 participants, the largest congress in recent years. Among participating nations, many came from Italy, Spain, USA and Japan, and many university-connected persons participated in this congress from Japan. The presentations were divided into 10 sections, with 19 oval presentations and 441 poster presentations. The themes were as follows. Session 1. Meat safety standards. 2. Marketing and consumer science. 3. Decontamination technologies of carcasses and fresh meat. 4. Meat quality. 5. Protection and certification of typical meat products. 6. Meat biochemistry. 7. Animal production: welfare and environmental impact. 8. New technologies in meat processing and packaging. 9. Meat safety. 10. Meat and Nutrition. The studies were mainly focused on practical and applied fields. Especially meat quality, meat biochemistry, meat processing and packaging held strong interest.
